Ingredients
- 1 lb. ground beef
- 1/2 medium onion, chopped
- 2 medium carrots, chopped
- 2 stalks celery, chopped
- 2 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes
- 1 (15.5 oz) can kidney beans, drained and rinsed
- 1 (15.5 oz) can pinto beans, drained and rinsed
- 3 cups chicken broth*
- 3 tbsp. chili powder
- 1½ tsp. cumin
- 1 tsp. oregano
- 1 tsp. salt
- ½ tsp. black pepper
💡 Tip: If you prefer a thicker, heartier chili use 3 cups of chicken broth as written above. I like my chili a little more brothy so I used 4 cups of chicken broth.
How to Make Homemade Chili
1. Brown the ground beef
In a large pot or Dutch oven, brown the ground beef over medium heat, breaking it apart as it cooks. Drain any excess grease if needed.
2. Add the vegetables
Add the chopped onion, carrots, and celery to the pot. Cook until the vegetables begin to soften.
Add the minced garlic and cook for about 1 minute, until fragrant.
3. Add the remaining ingredients
Add the diced tomatoes, kidney beans, and pinto beans.
Pour in the chicken broth and add the chili powder, cumin, oregano, salt, and pepper. Stir everything together.
4. Simmer
Bring the chili to a gentle boil, then reduce the heat and let it simmer until the vegetables are tender and the flavors have come together.
Give it a taste and add a little extra salt or seasoning if needed.
Favorite Chili Toppings
Serve your chili warm with your favorite toppings. Some delicious options include:
- Shredded cheddar cheese
- Greek Yogurt (I like to use this instead of sour cream, it tastes great and has extra protein)
- Green onions
- Crackers or tortilla chips
- Cornbread
Make It Ahead
Chili is one of those meals that’s perfect for leftovers. Store any extras in the refrigerator and simply reheat when you’re ready to eat.
It also freezes well, so you can make a big batch and save some for another night.
